Lori's Banana Chocolate Chip Muffins

Sisterhood’s 2022 Woman of Valor, Lori Adelman shares a family favorite!


When she was little, Sarah loved helping me make these muffins with the week's leftover bananas. She helped measure ingredients, loved smelling the vanilla and cinnamon, and would always touch the different dry ingredients and describe to me how they felt (baking powder was the softest). The recipe is super forgiving, which was great for me as an exhausted mom. While the muffins baked, Sarah had a treat of chocolate chips to match how old she was. I stopped increasing the number when she turned 8! Nowadays, she'd rather watch her tablet on Saturday mornings while I bake, but she still asks for her chocolate chips.


Yield: 12ish muffins


INGREDIENTS:

3 large very ripe bananas

1/4 cup granulated sugar

1/4 cup brown sugar

1 egg

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 1/2 cups all-purpose flour

1/3 cup unsweetened applesauce or oil

1 tsp vanilla

2 tsp cinnamon

1 cup semi sweet chocolate chips


DIRECTIONS:

Preheat oven to 375

Spray cupcake tin with non-stick spray (or use cupcake wrappers)

Mash bananas.

Add egg, oil, sugars and vanilla

Mix together dry ingredients

Add wet ingredients to dry ingredients, stir just to combine, do not over mix!

Bake for 18 - 20 minutes at 375
